BEEF FILLET WITH BOXTY & GUINNESS MUSTARD SAUCE

INGREDIENTS:

4×6 oz. beef fillets
1 tablespoon guinness
4 streaky rashers
mustard seed
4 ozs. butter

TRADITIONAL IRISH BOXTY

4 shallots chopped small
1/2 lb raw potatoes
1/4 lb button mushrooms
1/2 lb mashed potatoes
1 glass of red wine
flour
Salt and Pepper
Salt

METHOD:

Wash the raw potatoes and grate them into a linen cloth. Wring them tightly catching all the liquid in a bowl.

Leave the liquid in the bowl until the starch sinks and the water on top is clear.

Pour off the water and scrape the starch on to the potatoes. Season with salt and mix well.

Into this add enough flour to make pliable dough. Knead and roll out and cut in circles.

Fry on a greased griddle or pan until brown on both sides, keep hot.

BEEF FILLETS:

Skewer or tie the rashers around the fillets, season and fry in butter.

When cooked put aside and keep hot. Fry the mushrooms and shallots in the same pan and our off any grease remaining.

Add the red wine and reduce by half.

Finally add the mustard seed. Place Boxty on serving dish with fillets on top.

Pour sauce over fillets and garnish with watercress.
