RHUBARB CRUMBLE

This is the time of the year for rhubarb in Ireland. It is delicious and very much coming back in to fashion. Over the years, it seemed to lose its appeal but now it’s back in vogue as its seen as one of the super foods. Well superfood or not, this rhubarb crumble recipe is very tasty and extremely easy to make!

INGREDIENTS

175g/6oz Plain Flour
125g/4oz Sugar
125g/4oz Porridge Oats
125g/4oz Butter

FILLING

6-8 Rhubarb Stalks, cleaned and chopped
4 tablespoons Caster Sugar
4 to 5 tablespoons Water

METHOD

Preheat oven to 190°C/375°F/Gas 5. Lightly grease an ovenproof casserole dish.

Put the rhubarb, caster sugar and water into a saucepan and simmer for about 10 minutes until rhubarb breaks down and softens.

Meanwhile, make the crumble by putting the flour, sugar and oats into a bowl. Add the butter and rub into the dry ingredients.

Transfer the stewed rhubarb to the greased dish, spread the crumble mixture over the top and bake for about 20 minutes until golden brown.

Serve with custard, freshly whipped cream or ice cream.
