SIMPLE TOMATO AND SPINACH SALAD
Spinach, tomatoes, and cucumbers all coming, into season here so I put together a very simple recipe with a nice dressing. This is just the basic and you can add your favourite cheeses, beans, pine nuts or pulses after this or just keep it simple.
INGREDIENTS
A handful of tomatoes, a mix of cherry and vine cut into quarters.
Two handfuls of fresh baby spinach leaves.
1 cucumber, deseeded, peeled and chopped into pieces as the same size as the tomato’s chopped.
SALAD DRESSING RECIPE
½ cup of extra virgin olive oil.
2 tbsp. of balsamic vinegar.
salt and freshly ground pepper.
METHOD
Combine the olive oil and balsamic vinegar in a bowl. Stir until well combined and season to taste.
Combine the tomatoes, spinach, and cucumber in a large bowl.
Drizzle the dressing on top, and toss gently to combine.
